Corn Bread Alternative

Ingredients

6 oz cornmeal
4 oz sifted flour
2 tsp baking powder
1 tbsp sugar
½ tbsp salt
1 egg
1 pt milk
4 tbsp melted shortening

Preparation

  • Sift together corn meal, flour, baking powder, sugar and salt.
  • Beat egg and add with milk.
  • Melt and cool shortening, add to mixture and beat well.
  • Pour into a greased pan.
  • Bake in a hot oven for about 25 minutes.
  • Test with a skewer or knife when golden brown and firm.
  • Cut into slices when cold.
