Fish in Sweet and Sour Ginger Sauce

Ingredients

1½ lb filleted white fish
1 cup flour
1 tsp salt
1 tbsp oil
½ pint water
Fat for frying
Ginger sauce

Preparation

  • Clean and dry the fish, and remove the skin.
  • Separately, mix the flour, salt and oil. Add water to make a thick smooth batter.
  • Beat and leave to stand for 15 minutes.
  • Heat the fat, dip the fish in the batter and fry until golden brown.
  • Drain on crumpled brown paper.
  • Place on a warm dish and pour heated ginger sauce over the fish.
