Mango Fly

Ingredients

3 large green (un-ripened) mangoes
1 gallon water
½ oz mace
Piece of spice
Sugar to taste
A few cloves
2 egg whites, and shells
½ pt lemon juice

Preparation

  • Wash, peel and grate the mangoes.
  • Place the grated flesh in a jar, pour water over and sweeten to taste. Add the spice, cloves, mace, lemon juice and crushed egg shell.
  • Whisk the egg whites and add to the mixture. Stir thoroughly. Cover and leave for 3 days.
  • Strain off and bottle. Leave for 1 - 2 days.
  • Serve chilled.
