Stuffed Boulangers

Ingredients

4 medium sized boulangers
½ lb minced beef
1 onion
Salt and pepper
1 tsp chopped herbs
2 tsp Worcestershire sauce
2 tbsp fat
Bread crumbs, dried

Preparation

  • Boil the boulangers until tender.
  • Season the meat to taste adding all the ingredients.
  • Divide the boulangers in halves, remove and crush pulp finely. Do not destroy the outer skin.
  • Cook the meat and add the boulanger pulp.
  • Return the filling to skins, reshaping neatly. Sprinkle with dried bread crumbs.
  • Place on a greased sheet and bake in a moderate oven until brown.
