Coconut Bread

Ingredients

1 lb flour
¼ lb margarine
¾ cup milk
¾ cup coconut water
6 oz sugar
1 small grated coconut
1 tsp vanilla extract
3 tsp baking powder
6 oz local dried fruit (or raisins)
½ tbsp salt
1 egg

Preparation

  • Sift dry ingredients.
  • Add sugar, then beaten egg with milk, melted shortening, and extract.
  • Stir in grated coconut, dried fruits, (floured if used). Blend ingredients well.
  • Knead slightly on floured board.
  • Shape into loaves and put in greased loaf pan two thirds full.
  • Dust with fine sugar.
  • Bake in moderate oven.

Note: This makes 2 loaves.
